Favorite Family Food for Lent

Want a family favorite recipe to add to your repertoire of traditional salmon patties, tuna casserole, grilled cheese sandwiches and tomato soup this Lent?
Parishioners across the diocese shared 113 of their favorite meatless recipes with Arkansas Catholic. Everything from fish tacos to quiche to vegetarian chili was submitted.
While all of the recipes were read and considered, the newspaper staff had the difficult decision of narrowing down the list to the top 15 picks for publication in the Feb. 9 print edition. Those featured recipes and the other 98 are now available here to print, share and, of course, serve up this Lenten season. Note: Recipes are published as submitted, without testing.

Note: A number of recipes submitted originally specified chicken broth or stock as an ingredient. In those cases, we have removed references to “chicken” from the recipe. Although chicken broth is listed in some quarters as acceptable, we are assured that it cannot be used on Fridays in Lent. Vegetable broth or water are usually satisfactory substitutes.
